Dimerara sugar goes through minimal processing which makes it safer to consume. White sugar goes through a lot of processing. The refining process of making white sugar is more than that of demerara sugar.

Nutrients

Since white sugar goes through a lot of processing, it misses out on all the nutrients. Dimerara sugar does not go through much processing so it retains a little bit of the nutrients naturally present in sugarcane.

Colour

Dimerara sugar is brown in colour because of the molasses content present. People in the west call it brown sugar. The regular white sugar is white in colour because of the absence of molasses.

Flavour

Even though both the sugar types are made from the same raw material, they taste different. Demerara sugar has a slight flavour of caramel and the regular white sugar has a neutral, sweet flavour.

Size

Demerara sugar crystals are larger in size and are crunchier than white sugar. White sugar crystals are smaller in size but not smaller than powdered sugar.
