Castor sugar is a type of fine granulated sugar but the crystals are smaller so it dissolves quickly, it is best for baking, this makes it perfect for light sponges and airy desserts like meringues and souffles. It's also used to enhance beverages, such as tea because it doesn't need heat to liquefy. Though, castor sugar can be used in almost any way granular sugar is used. This type of sugar was often found in a shaker called castor which is used to sprinkle on fresh fruits.

Castor sugar is available in two flavors: white (regular) and golden. The golden caster sugar is unrefined and processed in a way that maintains some of the molasses, similar to brown sugar. It has a warmer texture and a more caramel-like taste than white castor sugar.

Is castor sugar the same as powdered sugar?

No, Powdered sugar is also known as icing sugar or confectioner's sugar. It is more crumbled than caster sugar, which is called 'powdered sugar. Powdered sugar has a pure form that contains no anti-caking agent. This means that pure powdered (icing) sugar easily clumps and requires filtering before use. It is also better than regular powdered sugar. Unlike pure powdered sugar, powdered sugar mixture contains a small amount of anti-caking agent such as cornflower or cornstarch which prevents the sugar from clumping.
